Marinated Split Tomatoes

If you grow tomatoes, chances are you've watched your beautiful harvest ripen, only to look one morning and seeing that that tomato you've been waiting for has split. Tomatoes split most often just as they're ripening, and, if you have several tomatoes ripening at the same time, it's likely that all of them will split.
This simple recipe is the perfect way to get the most out of your tomatoes that have cracked or split!
MARINATED SPLIT TOMATOES
Ingredients
Split tomatoes
Extra-Virgin Olive Oil
Salt and Pepper (to taste)
Preparation
Cut split tomatoes into 1/2-inch thick slices. If you are marinating cherry tomatoes, simply cut them in half. Mix olive oil, salt and pepper. Place tomatoes in a mason jar and pour your olive oil mixture over the tomatoes to cover them completely. Marinate in the refrigerator for 12 - 24 hours. Bring chilled tomatoes to room temperature before serving.
Variations: You can add dried chili flakes, basil, parsley and/or garlic to your marinade for extra flavor.
